I get these random waves of absolute NEED for banana bread every once in a a while and it recently hit. I had been CRAVING banana bread for like the past 2 weeks and I finally got around to making it.
I’m trying the gluten free lifestyle so this loaf is totally gluten free. Usually I lean away from cooking because some recipes I’ve found call for either:
1. So many ingredients or
2. Funky things I don’t already have at home especially for gluten free recipes
But after a quick Pinterest search and comparing a couple different recipes I finally found a combination I could get down with. Quick, simple, and just 3 ingredients.
All you’ll need is:
• 3 ripe bananas
• 2 eggs
• box of gluten free cake mix

1. Mush the bananas in a bowl
2. Add your eggs and mix
3. Slowly add the cake mix and stir until fully combined (I added a little vanilla extract for that extra pizzazz)

4. Grease a loaf pan and pour in your mixture
5. Pop into the oven at 350 for 40 minutes
My oven cooks fast so the top was getting toasty before the middle cooked, thankfully mom came in with some good advice to turn the oven to 300 and cover the top with foil and let it keep cooking since the middle was still a little mushy. Once it was done it was beautiful, golden, and baked to perfection. Not bad for my first time making banana bread.

To be completely honest I’ve never been a big “bread person”, but I’m developing a love for it. The next time my banana bread wave hits I’ll be ready with this lovely lil recipe. 10/10 filled the banana bread shaped hole in my heart.
